A classic sweet potato pie recipe that’s perfect for holidays or any time you’re craving a delicious homemade dessert. The combination of warm spices and creamy texture makes this pie irresistible.
Prick potatoes with a fork and bake in a 450° oven for 40-50 minutes, until very tender. Cool until easily handled. Meanwhile, prepare pastry and line a 9” pie plate with the pastry, crimping edges as desired.
Line the pastry with a double thickness of aluminum foil and bake at 450° for 8 minutes. Remove foil and bake for 4-5 minutes more until set and dry.
For filling, scoop out potatoes into large mixing bowl and mash with a potato masher (you should have 2 cups). Stir sugars, cinnamon, allspice, nutmeg, and salt into potatoes. Add eggs and butter, then beat lightly with rotary beater. Gradually stir in buttermilk or sour cream.
Pour into shell. To prevent over browning, cover edge of pie with foil. Reduce temperature to 375° and bake for 25 minutes. Remove foil and bake 25-30 minutes more until knife comes out clean. Cool on wire rack for 30 minutes, then chill 2 hours before serving.
