A simple and reliable strawberry jam made with fresh berries and liquid pectin. Beautiful on toast, scones, or stirred into yogurt.
Ingredients
- 6 pints strawberries, washed
- 3 cups sugar
- 1-1/3 cups liquid pectin
- Juice of 1 fresh lemon
Instructions
- In a large saucepan over medium heat, combine the strawberries, sugar, pectin, and lemon juice.
- Bring to a boil, then reduce heat to medium-low and simmer for 25 minutes, stirring occasionally.
- Spoon the hot mixture into 10 hot sterilised half-pint jars, filling to within 1/2 inch of the top.
- Wipe the rims clean with a damp towel and fit with hot lids.
- Tightly screw on the metal rings.
- Process in a hot water bath for 5 minutes.
- Using tongs, remove jars and place on a towel to cool.
- Test the seals and tighten the rings once cooled.
- Store in a cool, dark place.
Notes
Always use sterilised jars and test each seal before storing. Any jars that did not seal properly should be refrigerated and used within a few weeks.
