This is one delicious pork roast, smoked, extremely juicy, great served as chunks and on a big kaiser.

Instructions
- Place sugar in an ovenproof pan
- Cook at 200°F, stirring occasionally until dried
- Crumble through strainer
- Combine all the dry ingredients
- Smother the pork with your favourite mustard
- Rub the dry mix all over the roast until coated
- Keep remaining mixture in a re-sealable bag for next use
- Smoke in a water smoker for approximately 8 hours at a temperature close to 225°F
