Smoked Pork Shoulder Blade Roast

This is one delicious pork roast, smoked, extremely juicy, great served as chunks and on a big kaiser.

Instructions

  1. Place sugar in an ovenproof pan
  2. Cook at 200°F, stirring occasionally until dried
  3. Crumble through strainer
  4. Combine all the dry ingredients
  5. Smother the pork with your favourite mustard
  6. Rub the dry mix all over the roast until coated
  7. Keep remaining mixture in a re-sealable bag for next use
  8. Smoke in a water smoker for approximately 8 hours at a temperature close to 225°F
