Salmon & Vegetable Soup Recipe

Fresh salmon fillet soup loaded with corn, zucchini, carrots and potatoes. A creamy, healthy one-pot meal ready in minutes. Get the recipe.

No canned salmon in this recipe; uses an uncooked salmon fillet, with corn, zucchini, carrots and potatoes.

Instructions

  1. In a heavy saucepan, sauté garlic, herbs and onions in butter until transparent
  2. Add undiluted broth and all vegetables
  3. Simmer uncovered until vegetables are cooked
  4. Add milk and salmon
  5. Simmer until salmon is opaque and flakes easily with a fork; do not boil
  6. Season to taste
  7. Sprinkle individual bowls with cheese and serve immediately

Makes 4 servings.
