Rye Bran Muffins

Rye and whole wheat flour with chopped walnuts and currants

Delicious muffins made with rye and whole wheat flour, enhanced with chopped walnuts and currants for a hearty, nutritious treat.

Ingredients

  • 1 1/4 cup whole rye flour
  • 3/4 cup whole-wheat flour
  • 1/2 cup wheat bran
  • 1 1/4 tsp baking powder
  • 3/4 tsp salt
  • 1/2 tsp baking soda
  • 1 egg
  • 1 1/4 cup buttermilk
  • 1/3 cup vegetable oil
  • 1/4 cup liquid honey
  • 2 tbsp fancy molasses
  • 3/4 cup chopped walnuts
  • 3/4 cup currants
  • 1/4 cup oat flakes

Instructions

  1. In a large bowl, whisk together rye and wheat flours, bran, baking powder, salt and baking soda
  2. In a separate bowl, whisk together egg, buttermilk, oil, honey and molasses; pour over flour mixture
  3. Sprinkle on the walnuts and currants
  4. Mix together until just combined
  5. Scoop batter into 10 greased or paper-lined muffin tins
  6. Sprinkle with oats
  7. Bake in center of 375°F oven until tops are crisp and a skewer inserted into the center comes out clean, about 22 minutes
