Delicious muffins made with rye and whole wheat flour, enhanced with chopped walnuts and currants for a hearty, nutritious treat.
Ingredients
- 1 1/4 cup whole rye flour
- 3/4 cup whole-wheat flour
- 1/2 cup wheat bran
- 1 1/4 tsp baking powder
- 3/4 tsp salt
- 1/2 tsp baking soda
- 1 egg
- 1 1/4 cup buttermilk
- 1/3 cup vegetable oil
- 1/4 cup liquid honey
- 2 tbsp fancy molasses
- 3/4 cup chopped walnuts
- 3/4 cup currants
- 1/4 cup oat flakes
Instructions
- In a large bowl, whisk together rye and wheat flours, bran, baking powder, salt and baking soda
- In a separate bowl, whisk together egg, buttermilk, oil, honey and molasses; pour over flour mixture
- Sprinkle on the walnuts and currants
- Mix together until just combined
- Scoop batter into 10 greased or paper-lined muffin tins
- Sprinkle with oats
- Bake in center of 375°F oven until tops are crisp and a skewer inserted into the center comes out clean, about 22 minutes
