A classic no-bake treat — boozy, sweet, and dusted in powdered sugar. Perfect for the holidays and they keep well in the fridge for snacking all week.
Ingredients
- 2 cups vanilla wafers
- 1 cup raisins
- 2 cups powdered sugar, divided
- 2 tbsp light corn syrup
- 1/3 cup rum
Instructions
- Process vanilla wafers in a food processor until fine crumbs.
- Combine crumbs, raisins, 1 cup of the powdered sugar, corn syrup, and rum in a bowl. Mix well.
- Shape into small firm balls about 3/4 inch round.
- Sift remaining 1 cup of powdered sugar onto wax paper.
- Roll each ball in the powdered sugar to coat.
- Store in the refrigerator until needed.
Notes
These keep well refrigerated for up to 2 weeks — the flavour improves after a day or two.
