Pork Tenderloin with Limejuice & Beer Marinade

Not a lot of prep time makes this an easy but delicious grilled entree.

Ingredients

  • 1/2 cup beer
  • 1/3 cup limejuice
  • 2 cloves garlic, minced
  • 2 tbsp minced fresh parsley
  • 1 tsp chili powder
  • 1/2 tsp ground cumin
  • 1/4 tsp ground coriander
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 2 (12oz) pork tenderloins

Instructions

  1. In a large bowl, whisk together the beer, limejuice, garlic, parsley, chili powder, cumin, coriander, salt and pepper
  2. Add pork; turn to coat
  3. Cover and marinate in the fridge for 4 hours
  4. Place pork on greased grill over medium-high heat
  5. Brush with any remaining marinade
  6. Close lid and grill turning occasionally until just a hint of pink remains inside, about 18-20 minutes
  7. Transfer to a cutting board; tent with foil and let stand 5 minutes
  8. Slice and serve
