Pickled Corn Relish

This recipe can use either fresh corn or frozen, so you can even make it in the winter

This delicious corn relish recipe can use either fresh corn or frozen corn, making it perfect for year-round preparation. The sweet and tangy flavors make it a perfect accompaniment to many dishes.

Processing Instructions

  1. Boil ears of corn 5 minutes. Dip in cold water
  2. Cut whole kernels from cob or use six 10-ounce frozen packages of corn
  3. Combine peppers, celery, onions, sugar, vinegar, salt, and celery seed in a saucepan
  4. Bring to boil and simmer 5 minutes, stirring occasionally
  5. Mix mustard and turmeric in 1/2-cup of the simmered mixture
  6. Add this mixture and corn to the hot mixture
  7. Simmer another 5 minutes
  8. If desired, thicken mixture with flour paste (1/4-cup flour blended in 1/4 cup water) and stir frequently
  9. Fill hot jars with hot mixture, leaving 1/2 inch headspace
  10. Adjust lids and process

Recommended Process Time in a Boiling-Water Canner: Process 15 minutes in pint jars

Yield: About 9 pints
