The crispy pan fried coating makes this an easy and delicious recipe for lake trout fillets.

Ingredients

  • 2 fillets of lake trout
  • ½ cup grated Romano or Parmesan cheese
  • ½ cup bacon flavoured crackers or saltines, crushed
  • ½ cup cornmeal
  • ½ tsp garlic powder
  • ½ tsp salt
  • Pinch pepper
  • ¼ tsp celery salt
  • 1 tsp dill
  • ¼ tsp cayenne
  • 1 egg
  • ¼ cup milk
  • ½ cup vegetable oil

Instructions

  1. Rinse fillets in cold water and pat dry
  2. In a shallow bowl, combine the cheese, cracker crumbs, cornmeal, garlic powder, salt, pepper, celery salt, dill and cayenne
  3. In another bowl, beat egg and milk together
  4. Dip fish in the egg mixture and then gently roll in the crumb mixture to coat
  5. In a skillet, fry fish in the vegetable oil for 5-7 minutes until done, turning once
