The crispy pan fried coating makes this an easy and delicious recipe for lake trout fillets.
Ingredients
- 2 fillets of lake trout
- ½ cup grated Romano or Parmesan cheese
- ½ cup bacon flavoured crackers or saltines, crushed
- ½ cup cornmeal
- ½ tsp garlic powder
- ½ tsp salt
- Pinch pepper
- ¼ tsp celery salt
- 1 tsp dill
- ¼ tsp cayenne
- 1 egg
- ¼ cup milk
- ½ cup vegetable oil
Instructions
- Rinse fillets in cold water and pat dry
- In a shallow bowl, combine the cheese, cracker crumbs, cornmeal, garlic powder, salt, pepper, celery salt, dill and cayenne
- In another bowl, beat egg and milk together
- Dip fish in the egg mixture and then gently roll in the crumb mixture to coat
- In a skillet, fry fish in the vegetable oil for 5-7 minutes until done, turning once
