Mini-Mushroom Quiches with Bread Crust

Easy mini-mushroom quiches made with bread crusts in custard cups. Bake or microwave these adorable appetizers filled with sautéed mushrooms. Get the recipe.

These little quiches use flattened bread as a crust in custard cups. They can be made in the microwave or baked in the oven.

Instructions

  1. Spray 4-3/4 cup custard cups with non-stick spray
  2. Cut crusts from bread
  3. Roll each slice with rolling pin until flat
  4. Press one bread slice into each cup
  5. Spray lightly with non-stick spray
  6. Bake 10 minutes, until crisp
  7. Meanwhile, in a small skillet, melt butter over medium heat
  8. Add mushrooms, garlic, salt, and pepper
  9. Cook, stirring for 3-5 minutes, until mushrooms are tender
  10. Remove from heat
  11. Break 1 egg into each cup
  12. With a sharp knife, pierce the yolks
  13. Top the eggs with mushrooms divided equally
  14. Sprinkle with cheese
  15. Microwave quiches 2 at a time, uncovered on medium for 1½-2 minutes until eggs are almost set
  16. Let stand 3 minutes

OR Bake at 375°F for 15 minutes or until eggs are just set
