These little quiches use flattened bread as a crust in custard cups. They can be made in the microwave or baked in the oven.
Instructions
- Spray 4-3/4 cup custard cups with non-stick spray
- Cut crusts from bread
- Roll each slice with rolling pin until flat
- Press one bread slice into each cup
- Spray lightly with non-stick spray
- Bake 10 minutes, until crisp
- Meanwhile, in a small skillet, melt butter over medium heat
- Add mushrooms, garlic, salt, and pepper
- Cook, stirring for 3-5 minutes, until mushrooms are tender
- Remove from heat
- Break 1 egg into each cup
- With a sharp knife, pierce the yolks
- Top the eggs with mushrooms divided equally
- Sprinkle with cheese
- Microwave quiches 2 at a time, uncovered on medium for 1½-2 minutes until eggs are almost set
- Let stand 3 minutes
OR Bake at 375°F for 15 minutes or until eggs are just set
