Mediterranean Vegetarian Wraps

Whole wheat wraps filled with a puree of roasted red peppers, chickpeas, onion, then added are cucumber, tomato, onion, spinach and feta cheese for a healthy dish

Whole wheat wraps filled with a puree of roasted red peppers, chickpeas, onion, then added are cucumber, tomato, onion, spinach and feta cheese for a healthy dish.

Instructions

  1. Combine peppers, chickpeas, onion, lemon juice, oil vinegar, salt and pepper in a food processor
  2. Puree until smooth, scraping down sides of bowl often
  3. Refrigerate, covered for an hour to allow flavours to blend
  4. Remove 1-cup of the red pepper spread, reserving the remainder in the fridge for another time (will keep 5 days in fridge)
  5. Spread ΒΌ-cup of spread down the centre of each wrap
  6. Layer with onion, cucumber, tomato, spinach, and feta cheese
  7. Fold the bottom quarter of the wrap over the filling and roll up the sides to wrap
