A nice addition to a pickle tray. This simple marinated mushroom recipe creates a flavorful side dish that’s perfect for pickle trays or as an appetizer.

Ingredients

  • 8 oz button mushrooms
  • 3 tablespoons lemon juice
  • 1/2 cup oil
  • 2 tablespoons chopped parsley
  • 1/4 teaspoon salt
  • 1/4 teaspoon tarragon pepper

Instructions

  1. Wipe mushrooms clean with a paper towel
  2. Remove stalks, sliced thinly
  3. Combine lemon juice, oil, salt, pepper, tarragon and chopped parsley in a bowl; mix well
  4. Add mushrooms; mix well
  5. Cover and marinate 4 hours or overnight
