A nice addition to a pickle tray. This simple marinated mushroom recipe creates a flavorful side dish that’s perfect for pickle trays or as an appetizer.
Ingredients
- 8 oz button mushrooms
- 3 tablespoons lemon juice
- 1/2 cup oil
- 2 tablespoons chopped parsley
- 1/4 teaspoon salt
- 1/4 teaspoon tarragon pepper
Instructions
- Wipe mushrooms clean with a paper towel
- Remove stalks, sliced thinly
- Combine lemon juice, oil, salt, pepper, tarragon and chopped parsley in a bowl; mix well
- Add mushrooms; mix well
- Cover and marinate 4 hours or overnight
