A nice zesty dessert built for the summer time!
Ingredients
- 1/2-cup lemon juice
- 1/2-cup castor sugar
- 1/2-cup sweet or dry white wine
- 1/2-cup water
- 1-egg white
Instructions
- Place sugar, water and wine in a small pan, stir over low heat until sugar is dissolved
- Bring to a boil, reduce heat; simmer uncovered 10 minutes
- Allow to cool
- Stir strained lemon juice into cooled mixture; mix well
- Pour mixture into shallow pan, freeze approximately 1 hour or until mixture is just firm
- Remove from freezer, turn mixture into bowl, beat until smooth with fork
- Fold in firmly beaten egg white
- Return to pan
- Freeze until firm
