Grilled Quail with Herbs & Mustard

These are delicious birds that can be found, usually in a six pack in your frozen food section. This recipe butterflies the quail, marinates them with a paste of fresh herbs and mustard, and then skewers them for grilling. FANTASTIC!

These are delicious birds that can be found, usually in a six pack in your frozen food section. This recipe butterflies the quail, marinates them with a paste of fresh herbs and mustard, and then skewers them for grilling. FANTASTIC!

Instructions

  1. Place the herbs, garlic, salt and pepper into a food processor and process until finely chopped
  2. Add the mustard, lemon juice & olive oil
  3. Briefly process to make a thick paste
  4. Butterfly the quail by cutting out the backbone with a pair of kitchen shears
  5. Place the quail breast side up and press down on the breast to flatten
  6. Place quail and marinade into a re-sealable plastic bag
  7. Toss to evenly coat
  8. Marinate for 4 to 6 hours in the fridge
  9. Place a skewer through the thigh area of three quail and another at the wing area; they should now be secure
  10. Repeat for other 3 quail
  11. Grill over medium-high heat for 5 minutes aside
