A simple and delicious way to prepare fennel on the grill, bringing out its natural sweetness and creating a perfect side dish.
Grilling fennel is one of my favorite ways to prepare this aromatic vegetable. The high heat caramelizes the natural sugars in the fennel, creating a wonderfully sweet and smoky flavor that pairs beautifully with grilled meats or can stand alone as a vegetarian side dish.
Fennel has a mild licorice flavor that becomes much more mellow and sweet when grilled. The bulb becomes tender while the edges get beautifully caramelized. This is a perfect summer side dish that takes advantage of the grill being fired up for other dishes.
