French Canadian Yellow Split Pea Soup Recipe

A classic French Canadian comfort soup — thick, smoky, and deeply satisfying. The slow cooker does all the work, filling your home with an incredible aroma all day.

Ingredients

  • 1 lb yellow split peas
  • 8oz smoked pork hock
  • 3 medium carrots, diced
  • 1 large potato, peeled and diced
  • 1 stalk celery, finely chopped
  • 1 bay leaf
  • 1/4 tsp thyme
  • 1/4 tsp basil
  • 1/4 tsp oregano
  • Salt and pepper to taste

Instructions

  1. Soak peas using one of these methods:
    • Place peas in a bowl, cover with cold water, and soak overnight. Rinse well before using.
    • Or place peas in a pot, cover with water, bring to a boil, remove from heat, and let stand 1 hour. Rinse well.
  2. Place rinsed peas in the slow cooker.
  3. Add 7 cups water, smoked pork hock, carrots, potato, celery, bay leaf, thyme, basil, and oregano.
  4. Cover and cook on low for 10–12 hours, or on high for 6–8 hours, until soup is thick and bubbling.
  5. With a slotted spoon, gently remove the pork hock. Strip the meat from the bone, cut into chunks, and return to the soup.
  6. Remove and discard the bay leaf.
  7. Season with salt and pepper to taste and serve.
