A classic French Canadian comfort soup — thick, smoky, and deeply satisfying. The slow cooker does all the work, filling your home with an incredible aroma all day.
Ingredients
- 1 lb yellow split peas
- 8oz smoked pork hock
- 3 medium carrots, diced
- 1 large potato, peeled and diced
- 1 stalk celery, finely chopped
- 1 bay leaf
- 1/4 tsp thyme
- 1/4 tsp basil
- 1/4 tsp oregano
- Salt and pepper to taste
Instructions
- Soak peas using one of these methods:
- Place peas in a bowl, cover with cold water, and soak overnight. Rinse well before using.
- Or place peas in a pot, cover with water, bring to a boil, remove from heat, and let stand 1 hour. Rinse well.
- Place rinsed peas in the slow cooker.
- Add 7 cups water, smoked pork hock, carrots, potato, celery, bay leaf, thyme, basil, and oregano.
- Cover and cook on low for 10–12 hours, or on high for 6–8 hours, until soup is thick and bubbling.
- With a slotted spoon, gently remove the pork hock. Strip the meat from the bone, cut into chunks, and return to the soup.
- Remove and discard the bay leaf.
- Season with salt and pepper to taste and serve.
