Fish Chowder

This chowder uses whitefish or halibut, with bacon, potatoes and clam juice

This hearty fish chowder combines fresh halibut or whitefish with bacon, potatoes, and aromatic vegetables in a rich, creamy broth. Perfect for a warming meal.

Instructions

  1. Sauté onions and celery in 1-tbsp of the bacon drippings until tender about 8 minutes
  2. Stir in tomatoes and liquid, potatoes, clam juice, tomato sauce, Worcestershire and rosemary; heat to a boil
  3. Reduce heat and simmer, covered, until vegetables are tender, about 10 minutes
  4. Heat chowder to a boil
  5. Mix flour with half & half
  6. Add to chowder, stirring until thickened, about 1 minute
  7. Add fish and reduce heat to a simmer until fish is tender and flakes with a fork, about 5 minutes
  8. Season to taste with salt & pepper
  9. Add additional milk if chowder is too thick
  10. Serve in bowls; sprinkle with bacon
