A quick and easy vegetable dish that makes a perfect side dish. This recipe combines fresh zucchini with colorful red peppers, onion, and Italian seasoning for a flavorful and healthy vegetable medley.
Instructions
Cut zucchini in half lengthwise
Cut each half into 1/2” thick half moons
Sauté all ingredients except cheese in olive oil coated pan over medium-high heat for 3-5 minutes
Grate fresh Romano cheese over all and remove from heat
