Pineapple is also used in this Indian inspired side dish.
Ingredients
- ½ cup diced onion
- ½ cup diced red pepper
- ¼ cup sliced mushrooms
- 1 tsp minced garlic
- ¼ cup slivered almonds
- Olive oil for sautéing
- 1 tsp curry powder
- 1 tsp cumin
- Fresh ground black pepper to taste
- ½ tsp salt
- ½ cup pineapple juice concentrate
- 2 cups chicken stock
- 1 cup brown rice
- ½ cup chickpeas
- ½ cup chopped fresh pineapple
Instructions
- Sauté the onion, red pepper, mushrooms, garlic, and almonds in olive oil
- Add the curry powder, cumin, black pepper, salt, pineapple juice concentrate, and chicken stock
- Bring to a boil
- Add the brown rice
- Simmer for 45 minutes with the lid on
- Add the chickpeas and fresh pineapple
- Return the lid and let rest for minutes
- Serve
