LRA: Main Dish Recipe - Crispy Duck

This delicious duck can be made in 1 day, but we stretched it out to 2 days to make it a little easier. Fantastic dish!

This delicious duck can be made in 1 day, but we stretched it out to 2 days to make it a little easier. Fantastic dish!

Instructions

  1. Rinse and clean the duck well
  2. Rub with salt inside and out
  3. Place it in a deep dish
  4. Add ginger root, garlic, onions, rice wine or sherry, five-spice powder and Szechwan peppercorns
  5. Place dish inside a large wok with some water
  6. Steam for about 2 1/2 hours, adding water as necessary
  7. Remove and discard the ginger root, garlic, onions and Szechwan peppercorns
  8. Turn the duck over and let it marinate in the juice
  9. After about 2-3 hours, take it out to cool until the skin in dry (can be steamed the day before and refrigerated)
  10. Cut the duck into quarters
  11. Lightly toss with cornstarch
  12. In a deep fryer or deep frying pan, heat the oil and deep-fry the duck in batches to maintain hot oil, until golden and crispy
  13. Remove from oil and place on paper towels
