A rich and creamy pasta dish — tender chicken and mushrooms in a fresh basil cream sauce over fettuccine. Elegant enough for company, easy enough for a weeknight.
Ingredients
- 1-1/2 lbs boneless chicken breasts, cubed
- 1-1/3 cups green onion, finely chopped
- 1 lb fresh mushrooms, sliced
- 2 tbsp vegetable oil
- 1/2 cup butter or margarine
- 1/4 cup flour
- 2 cups chicken broth
- 1 cup whipping cream
- 2 tbsp fresh basil, finely chopped
- 1/4 tsp white pepper
- Hot cooked fettuccine
Instructions
- In a skillet, sauté chicken, green onions, and mushrooms in oil until chicken is no longer pink. Set aside.
- In a large saucepan, melt butter over medium heat. Gradually add flour, stirring until smooth.
- Gradually whisk in chicken broth and whipping cream.
- Stir in basil and white pepper.
- Bring to a boil; cook and stir for 2 minutes until thickened.
- Stir in the chicken mixture and heat through.
- Serve over hot cooked fettuccine.
