A rich and creamy pasta dish — tender chicken and mushrooms in a fresh basil cream sauce over fettuccine. Elegant enough for company, easy enough for a weeknight.

Ingredients

  • 1-1/2 lbs boneless chicken breasts, cubed
  • 1-1/3 cups green onion, finely chopped
  • 1 lb fresh mushrooms, sliced
  • 2 tbsp vegetable oil
  • 1/2 cup butter or margarine
  • 1/4 cup flour
  • 2 cups chicken broth
  • 1 cup whipping cream
  • 2 tbsp fresh basil, finely chopped
  • 1/4 tsp white pepper
  • Hot cooked fettuccine

Instructions

  1. In a skillet, sauté chicken, green onions, and mushrooms in oil until chicken is no longer pink. Set aside.
  2. In a large saucepan, melt butter over medium heat. Gradually add flour, stirring until smooth.
  3. Gradually whisk in chicken broth and whipping cream.
  4. Stir in basil and white pepper.
  5. Bring to a boil; cook and stir for 2 minutes until thickened.
  6. Stir in the chicken mixture and heat through.
  7. Serve over hot cooked fettuccine.

Makes 6–8 servings.
