Chicken breasts stuffed with an apple and bacon stuffing and a little adobo sauce to perk up the stuffing!
Instructions
- In a small skillet, fry the bacon until crisp; remove and place on a paper towel
- Drain the fat except for 2 tsp
- Sauté the apple until tender
- Add the onion, applesauce, chipotle peppers and bacon; sauté another 2 minutes
- Cut a pocket in each chicken breast and stuff with apple mixture
- In a small skillet, brown the chicken in oil on both sides
- Transfer to a baking dish
- Bake uncovered at 425°F for 12-15 minutes or until chicken juices run clear
- Meanwhile, add the flour, apple juice, salt and pepper to the skillet
- Stir to loosen brown bits
- Bring to a boil; stir for 2 minutes
- Serve with chicken
