A favourite, the classic baked cheesecake with cherry pie filling topping.
Ingredients
Crust:
- 1 1/4 cup graham cracker crumbs
- 2 tbsp sugar
- 1/3 cup butter or margarine, melted
Filling:
- 2 8oz packages cream cheese, softened
- 1/2 cup sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 21oz can cherry pie filling
Instructions
- In a small bowl combine the cracker crumbs and sugar
- Stir in the melted butter
- Press into an 8-inch square baking dish & set aside
- In a mixing bowl, beat the cream cheese and sugar until smooth
- Beat in eggs and vanilla until just blended
- Pour over crust
- Bake in a 350°F oven for 15-20 minutes or until almost set
- Cool for 1 hour on a wire rack
- Refrigerate for 8 hours or overnight
- Spoon pie filling on top
- Serve
