Cherry Cheesecake

A favourite, the classic baked cheesecake with cherry pie filling topping.

Ingredients

Crust:

  • 1 1/4 cup graham cracker crumbs
  • 2 tbsp sugar
  • 1/3 cup butter or margarine, melted

Filling:

  • 2 8oz packages cream cheese, softened
  • 1/2 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 21oz can cherry pie filling

Instructions

  1. In a small bowl combine the cracker crumbs and sugar
  2. Stir in the melted butter
  3. Press into an 8-inch square baking dish & set aside
  4. In a mixing bowl, beat the cream cheese and sugar until smooth
  5. Beat in eggs and vanilla until just blended
  6. Pour over crust
  7. Bake in a 350°F oven for 15-20 minutes or until almost set
  8. Cool for 1 hour on a wire rack
  9. Refrigerate for 8 hours or overnight
  10. Spoon pie filling on top
  11. Serve
