Cheddar Dijon Shortbread

A simple recipe that combines the 5 ingredients to form into a log and then sliced to bake

SERVES30-40 shortbreads

A delicious savory shortbread combining sharp cheddar cheese with the tangy kick of Dijon mustard. These make perfect appetizers or snacks.

Instructions

  1. Beat butter with mixer until light and fluffy
  2. Beat in cheese and then mustard
  3. In a separate bowl, combine flour and dry mustard
  4. Using a wooden spoon, gradually stir flour mixture into butter mixture
  5. Transfer dough to floured work surface
  6. Shape into a 10 inch log
  7. Cover with plastic wrap and refrigerate until firm, approx 2 hours
  8. (Can freeze at this point for up to 2 months; thaw in fridge before baking)
  9. Preheat oven to 350°F
  10. Slice log into 1/4-inch thick slices
  11. Place on parchment paper lined cookie sheet
  12. Bake in centre of oven until golden, about 15 minutes
  13. Cool in pan on rack for 10 minutes
  14. Transfer to racks to complete cooling

Makes 30-40 shortbreads
