A delicious coffee-flavored cheesecake with a ladyfinger crust.
Ingredients
- 1 package giant ladyfingers
- 2 tbsp instant coffee
- 1/4 cup warm milk
- 3 (8oz) packages cream cheese
- 1 cup sugar
- 3 eggs
Instructions
- Place the ladyfingers on bottom of a 9-inch springform pan
- Beat cream cheese & sugar in bowl with mixer until smooth
- Add eggs, one at a time. Mix until well blended
- Dissolve the instant coffee into the warm milk
- Blend into cheese mixture
- Pour into pan
- Bake 450°F for 10 min.
- Reduce to 250°F for 30-35 minutes or until centre is almost set.
- Remove from oven
- Run knife around rim to prevent cracking
- Cool
